
Thai Fried Rice - Khao Pad

red curry paste |

chicken breast, sliced (or prawns, pork, beef) |

eggs, lightly beaten |

green beans, sliced |

tomato, chopped |

spring onions, chopped |

cucumber, sliced (for decoration) |

limes, cut in half (for decoration) |

Method:
- Heat the oil in a wok. Add the garlic and stir-fry until golden.
- Add sugar and curry paste and stir-fry.
- Stir in the meat or prawns. Push to one-side of the wok.
- Add beaten eggs (use a little bit more oil if necessary), stir until
cooked.
- Add rice. Sprinkle with fish sauce. Add beans, onions, springs
onions and chopped tomato. Stir-fry until heated through.
- Decorate with lime, cucumber, tomato and serve.
