
Fish in Ginger Sauce - Pla Jian

whole fish, e.g. red snapper |

cooking oil |

garlic, finely chopped |

spring onions, cut into small pieces |

fresh ginger, finely chopped |

fish sauce |
| 1½ tbsp |
sugar |
| 1 cup |
water |
| 1 tbsp |
tamarind juice |
| ½ tsp |
white pepper |
| 1 tbsp |
cornflour, mixed with a little cold water |

pepper (capsicum), finely sliced |

small onion, sliced |

fresh coriander, to garnish |
Method:
- Wash and trim the fish.
- Fry, grill or steam the whole fish. Set aside and keep warm.
- Heat oil in a wok. Add garlic, spring onions, ginger and sugar.
- Reduce heat and stir for about 3 minutes.
- Add water, tamarind juice, white pepper, turmeric and fish sauce.
- Stir in the cornflour. Add peppers and onions. Stir for about 2 minutes.
- Place fish on a serving plate. Pour sauce over fish. Garnish with
coriander sprigs.
- Serve with steamed rice.
