Fish in Ginger Sauce - Pla Jian

Cook Time: 25 minutes

Ingredients:
Quantity  
700 grams whole fish, e.g. red snapper
1 tbsp cooking oil
2 cloves garlic, finely chopped
2 spring onions, cut into small pieces
1 tbsp fresh ginger, finely chopped
1½ tbsp fish sauce
1½ tbsp sugar
1 cup water
1 tbsp tamarind juice
½ tsp white pepper
1 tbsp cornflour, mixed with a little cold water
¼ pepper (capsicum), finely sliced
½ small onion, sliced
4 sprigs fresh coriander, to garnish

Method:

  1. Wash and trim the fish.
  2. Fry, grill or steam the whole fish. Set aside and keep warm.
  3. Heat oil in a wok. Add garlic, spring onions, ginger and sugar.
  4. Reduce heat and stir for about 3 minutes.
  5. Add water, tamarind juice, white pepper, turmeric and fish sauce.
  6. Stir in the cornflour. Add peppers and onions. Stir for about 2 minutes.
  7. Place fish on a serving plate. Pour sauce over fish. Garnish with coriander sprigs.
  8. Serve with steamed rice.
