
Chicken soup with
coconut milk - Tom Kha Gai

chicken stock |
| 2 stalks |
lemon grass sliced |

kaffir lime leaves, torn into small pieces |
| 1 - 5cm (2in) |
galangal root, sliced |
| 3 cups |
coconut milk |
| 500 grams |
chicken breast, sliced |
| 100 grams |
straw mushrooms, quartered. |
| 3 |
small chilies, sliced |
| 3 tbsp |
lime juice |
| 3 tbsp |
fish sauce |
| ½ tsp |
sugar |
Method:
- Boil the chicken stock in a saucepan, add lemon grass, kaffir lime
leaves and galangal root.
- Add coconut milk, chicken, mushrooms, chilies, lime juice, fish sauce
and sugar.
- Simmer for about another 5 minutes until the chicken is well done.
- Serve with steamed rice.
Suggestion:
Instead of chicken you can use seafood. |
