Chicken soup with coconut milk - Tom Kha Gai

Cook Time: 15 minutes

Ingredients:
Quantity  
1 cup chicken stock
2 stalks lemon grass sliced
3 kaffir lime leaves, torn into small pieces
1 - 5cm (2in) galangal root, sliced
3 cups coconut milk
500 grams chicken breast, sliced
100 grams straw mushrooms, quartered.
3 small chilies, sliced
3 tbsp lime juice
3 tbsp fish sauce
½ tsp sugar

Method:

  1. Boil the chicken stock in a saucepan, add lemon grass, kaffir lime leaves and galangal root.
  2. Add coconut milk, chicken, mushrooms, chilies, lime juice, fish sauce and sugar.
  3. Simmer for about another 5 minutes until the chicken is well done.
  4. Serve with steamed rice.
Suggestion:
Instead of chicken you can use seafood.
